Winter Rainbow Salad
Serves 4
Ingredients
- 2 cups cooked quinoa
- 2 cups chopped regular cooked beets
- 1 pomegranate, seed removed
- 100g goat cheese
- ½ cup crushed or chopped pistachios
- 2 cups chopped apples
- 2 cups fresh baby spinach
- a handful of green onions or fresh herbs if you want
- 1 tablespoon red wine vinegar
- 1 tablespoon olive oil
- salt & pepper to season
Instructions
Toss everything together and serve immediately. Save some pomegranate seeds, crushed pistachios, and crumbled goat cheese to sprinkle on top before serving.
