Tuna Balls
These are so quick and easy to make. Lovely as an afternoon snack.
Ingredients
- 1 can of good quality tuna in olive oil or springwater (drained)
- 1 corn cob raw (kernals removed)
- 2 eggs
- 2 spring onions, finely diced
- 1 cup cooked brown rice
- 1/2 cup rice flour
- sweet chilli sauce
- Himalayan Salt and pepper
- Rice crumbs to coat
Method
- Place all ingredients in large bowl
- Mix in fork or clean hands
- Form small balls and lightly dust with rice crumbs
- Place on slightly oiled oven tray and bake until golden (for approx 30mins on medium heat (180oC)
- When cool, store in airtight container in the fridge
Makes 16 balls Serve with dipping sauce – natural yoghurt with chopped coriander, mint, cumin powder and finely diced cucumber.
