Spinach, Strawberry & Feta Salad
Ingredients:
7 cups baby spinach
1 punnet of strawberries, quartered
¼ cup toasted slivered or flaked almonds
½ red onion, thinly sliced
½ cup crumbled feta (can use more)
Dressing:
5 tablespoons extra virgin olive oil
3 tablespoons raspberry vinegar
1 teaspoon Djjon mustard
Salt and pepper
Arrange the spinach leaves on a plate, top with strawberries, feta and onion. Mix dressing ingredients in a jar and shake. Pour over salad. Top with toasted almonds.
