Breakfast Quinoa Trifle
This breakfast is perfect for warm summer mornings. Prepare the night before and assemble in the morning!
Ingredients
Quinoa layer:
- 1/2 cup flaked (rolled) quinoa *
- 1 tablespoon shredded coconut
- 1 handful chopped almonds
- 1 cup Pureharvest Unsweetened Almond Milk
- 1/2 teaspoon cinnamon
- 1/2 teaspoon vanilla
Nut mix layer: **
- 1/2 tablespoon sunflower seeds
- 1 tablespoon pumpkin seeds
- 1 tablespoon pecans
- 1/2 teaspoon cinnamon
Yoghurt Layer: Organic yoghurt of your choice
Berry layer: mixed berries (frozen if you like)
Directions
- For the quinoa layer mix all the ingredients into a bowl and soak overnight in the fridge.
- To make the trifle place a few spoonfuls of the soaked quinoa in the bottom of a glass. Next sprinkle a layer of nut mix and top with a couple of spoonfuls of yoghurt. Repeat this process as many times as you like to create a delicious layered breakfast.
* Ensure that the quinoa that you use is sustainably produced – preferably Australian grown.
** Nuts can be soaked overnight also.
